POSITION DESCRIPTION

Job Title: Beef Innovation Center Culinarian

Reports To:  Director, Innovation and Culinary Services

General Responsibilities:
The Beef Innovation Center Culinarian is responsible for managing the daily needs and procurement for the Beef Innovation Center kitchens; assists with in-house catering functions; and with recipe testing and development.  The position will also act as a support person to the managers and directors of culinary programs.

Specific Responsibilities:

  • Manages the operational aspects of the kitchens including inventory, ordering and securing groceries, supplies, etc., for all recipe development and other functions.
  • Conducts recipe testing and follows strict protocols in the process.
  • Assists lead recipe tester with preparation and clean-up as necessary.
  • Assists with in-house catering functions including menu development.
  • Works on various projects including recipe development, recipe testing, package direction testing and development, and other programs and services offered by the Beef Innovation Center.
  • Assists in the organization and maintenance of recipes and photos in central files and database, including test sheets and nutritional information. 
  • Monitors and reports quarterly on marketplace and food publications for food/lifestyle trends and new product activity.
  • Serves as a credible resource for beef and veal selection, handling, preparation and cookery information.  Builds, organizes and maintains department files on cookery information, resource recipes, etc. Responds to requests for information as needed.
  • Assists in maintaining sanitation requirements of the facility.
  • Other duties and responsibilities as assigned.

Qualifications:
The Beef Innovation Center Culinarian must possess a culinary degree/certificate from an accredited school. Successful candidate must have at least two years of proven work history with a team approach and must also have a solid knowledge and understanding of culinary skills, processes and industry practices. Beef industry experience is a plus.  This person must also demonstrate the ability to manage multiple projects and have excellent verbal and written communication skills, and must be proficient in Microsoft Word, Excel, PowerPoint, and Outlook.  Candidate will also be a leader, have integrity and strong personal ethics.  Travel of up to 25% is required in this position.
